Waldorf Astoria Kuala Lumpur announces the appointment of Malaysian Vijayakant Shanmugam as Director of Culinary, who brings three decades of international culinary expertise to the hotel’s debut in Malaysia. Vijay will oversee all culinary operations across the property’s collection of restaurants, lounges, banqueting and special events, while working alongside globally celebrated culinary partners chefs Garima Arora and Jean-Georges Vongerichten to curate a distinctive, destination-led culinary programme ahead of the hotel’s highly anticipated debut.
Raised in Kuala Selangor, Malaysia, Vijay has risen to become one of Asia Pacific’s most respected luxury hotel culinary leaders. His career spans globally renowned hospitality brands, including Hilton, Shangri-La, Raffles, and Fairmont & Swissôtel across Southeast Asia, the Maldives, Japan and India. Over the years, Vijay has trained in Peru, worked in Michelin-starred restaurants and spearheaded the launch of landmark luxury hotels, leading multicultural culinary teams and specialising in garde manger, French and Nikkei cuisine. At heart, Vijay’s passion
lies in elevating and celebrating Malaysian cuisine on the world stage and delivering a contemporary perspective of its diverse culinary traditions.

His entry into the world of Michelin-starred gastronomy began at Raffles Singapore, where he worked as executive sous chef under the guidance of French executive chef Pierre Burgade. His most recent roles include Director of Culinary at Waldorf Astoria Maldives Ithaafushi, where he oversaw the award-winning resort’s portfolio of 11 culinary venues including The Ledge by Dave Pynt; and Hilton Singapore Orchard, where he was part of the launch of Osteria Mozza by chef Nancy Silverton.
Drawing on his Malaysian roots and extensive international experience, he will lead the development of a culinary programme that brings together world-class talent, local flavours, ingredients and traditions, and exceptional culinary experiences, shaping Waldorf Astoria Kuala Lumpur as a destination for dining, celebrations and connection.
“It’s an honour to lead the culinary vision for such a highly anticipated luxury hotel opening in Kuala Lumpur, bringing Waldorf Astoria’s storied legacy to my home country and establishing the first Malaysian outpost as ‘The Greatest of Them All’,” said Vijay. “In a city with an already dynamic food and beverage scene, my aspiration is to set new benchmarks, and for Waldorf Astoria Kuala Lumpur to be recognized as a defining culinary destination, where world-class dining is shaped by a deep connection to local flavours, refined craftsmanship, and memorable dining experiences.”
