Amalfi Coast’s Caruso Brings Antiqua Cucina Nova to Singapore’s L’Amo Bistrò del Mare

Executive Chef Armando Aristarco joins award-winning Chef Daniele Sperindio for a three-day celebration of authentic Italian coastal cuisine from 13th to 15th November.

Caruso, A Belmond Hotel, Amalfi Coast, brings its new gastronomic philosophy, Antiqua Cucina Nova, to Singapore for an exclusive three-day culinary residency at L’Amo Bistrò del Mare, from 13 to 15 November. Executive Chef Armando Aristarco will join award-winning Chef Daniele Sperindio, Director of Culinary & F&B at METT Singapore and the culinary force behind ART di Daniele Sperindio, for a programme of exclusive dining experiences celebrating the richness of Italy’s coastal culinary heritage. 

Hosted at L’Amo Bistrò del Mare, the acclaimed coastal Italian restaurant at METT Singapore, the residency brings together two chefs united by a shared passion for authentic Italian cuisine, exceptional seafood and the finest seasonal ingredients. Throughout the collaboration, guests will discover two complementary culinary philosophies inspired by Italy’s coastline, where respect for tradition, craftsmanship and product quality define every dish. 

The residency also marks the introduction of Caruso’s new gastronomic philosophy, Antiqua Cucina Nova, to audiences in Southeast Asia. 

Created by Executive Chef Armando Aristarco, Antiqua Cucina Nova is a philosophy built on simplicity, respect and authenticity. Founded on a continuous dialogue between memory and innovation, it honours the culinary traditions of Naples and the Mediterranean by bringing out the purest expression of every ingredient. Each dish is composed of only a few carefully selected elements, allowing flavours, aromas and seasonality to speak for themselves. Guided by respect for local producers and traditional craftsmanship, Chef Armando Aristarco elevates traditional recipes while preserving their authentic soul.

“Our cuisine begins with respect,” says Chef Armando Aristarco. “Respect for the ingredient, for those who produce it and for the culinary traditions that have shaped our identity. Antiqua Cucina Nova is our way of honouring this heritage while allowing it to evolve naturally. Bringing this philosophy to Singapore alongside Chef Daniele is a wonderful opportunity to build a dialogue between two Italian culinary stories connected by the sea.” 

For the occasion, Chef Aristarco will collaborate with Chef Daniele Sperindio, one of Asia’s leading Italian chefs. With more than twenty years of international experience, Michelin stars, a Best Italian Restaurant in the World recognition by Gambero Rosso and a career spanning some of the world’s most influential kitchens, Chef Sperindio is recognised for his refined interpretation of Italian gastronomy and his commitment to showcasing the richness of Italy’s regional culinary heritage. L’Amo Bistrò del Mare brings the timeless allure of Italian dining to the Lion City, offering alfresco dining within the lush nature of Fort Canning Park at METT Singapore. The historic listed property celebrates its 100th anniversary this year and houses 84 rooms and suites, blending elegant colonial charm with contemporary soul.

Together, the two chefs will present menus celebrating the essence of traditional Italian cuisine, highlighting high-quality seasonal ingredients and exceptional seafood. The collaboration will showcase the diversity of Italy’s coastal flavours through a cuisine that values simplicity, authenticity and meticulous attention to every ingredient. 

More than a four-hands collaboration, the residency is designed as a cultural exchange, bringing together two chefs, two destinations and a shared vision of Italian hospitality. 

“Belmond is synonymous with timeless luxury, extraordinary destinations and a deep respect for culture, craft and sense of place, making this a particularly meaningful collaboration for METT Singapore,” says Chef Daniele Sperindio. 

Priced at S$188++ per person, the six-course Four Hands Dining Experience is available for lunch and dinner. The experience begins with the Aperitivo, a playful introduction to the flavours of Italy, followed by Chef Daniele Sperindio’s Crudo di Santa Margherita, offering a refreshing start to the palate, pairing amberjack crudo and red prawn with oscietra caviar, pear and chamomile.

The journey then travels south to Campania and the Amalfi Coast with Chef Armando Aristarco’s Fagioli Cannellini, Cozze e Pane, combining Slow Food Presidia cannellini beans, black mussels and toasted Neapolitan sourdough. This is followed by a Campanian Risone and Zuppa di Pesce… Un Giro in Costiera, a hearty seafood stew of scampi, octopus, catch of the day and crostone. 

Continuing inland, L’Amo’s Vitello Tartufato brings together roasted veal, porcini mushrooms and truffle in a seasonal autumn dish with an homage to the inland areas.

The experience concludes with Caruso’s Il Limone, a delicate sablé with lemon mousse and Sfusato Amalfitano I.G.P., a prized variety of Amalfi lemon. 

For a shorter introduction to the collaboration, a three-course lunch menu is available at S$98++ per person, featuring signature expressions from both kitchens.

Set within the elegant surroundings of L’Amo Bistrò del Mare, the three- day residency promises an immersive celebration of Italian culture, craftsmanship and conviviality, offering Singaporean audiences a unique opportunity to experience the flavours and philosophy of one of Italy’s most iconic destinations.
